How to make it

  • 1. With a saute pan on medium heat cook the bacon till golden, not crisp. Remove the bacon and let drain on a paper towel. Add the onions to the bacon fat and cook till slightly translucent. Add the peppercorns, juniper berries, beer, and the bay leaves and let simmer for 5 minutes.
  • 2. Transfer the onion mixture,bacon, and the sauerkraut, (with juices), to the slow cooker, and cook on high for 4 hours. Stir occasionally.
