Thai Mushroom Pineapple Soup

- 8 cups of vegetable broth shopping list
- 1lb. mushrooms shopping list
- chili paste to taste shopping list
- 1 can pineapple chunks shopping list
- 1 red pepper shopping list
- 1 yellow pepper shopping list
- 1-2 serrano chilies - de-seeded and minced. shopping list
- 1 lime - juice & skin zest shopping list
- 1/2 bunch cilantro shopping list
How to make it
- Simmer the veggie broth just below a boil.
- Add 1 tsp. (or to taste - I added a 3 tbs by the end but I like it spicy) - chili paste
- Add the mushrooms - sliced or diced.
- Add the peppers - 2" thin long slices
- Add the Pineapple.
- Add the serrano chili
- Stir in the lime juice + zest
- I cooked it to just about boiling, then cooked it for a few more hours at low. Depending on how slow cooked you like to combine things, you could cook this for 1-4 hours.
- * Keep adding chili paste until it is spicy enough for your taste.
- Garnish with cilantro just before serving.
