Holiday Ambrosia Cake

- 1/2 c butter,softened shopping list
- 1 c sugar shopping list
- 4 eggs shopping list
- 1 tsp coconut extract shopping list
- 2-1/2 c flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 c unsweetened pineapple juice shopping list
- 2=1/4 c flaked coconut shopping list
- 1-1/2 c chopped candied pineapple shopping list
- 1 c chopped macadamia nuts shopping list
- 1 c golden raisins shopping list
- 1/2 c chopped dried mangos shopping list
- 1/2 c chopped green candied cherries shopping list
- 1/2 c chopped red candied cherries shopping list
- Cocnut Glaze: shopping list
- 1 c confectioners sugar shopping list
- 2 TB coconut milk or milk shopping list
- 1/4 tsp coconut extract shopping list
- 1/4 tsp vanilla extract shopping list
How to make it
- In large bowl,cream butter and sugar till light and fluffy. Add eggs,one at a time,beating well after each addition. Beat in extract. ombine the flour,baking powder and salt;add to creamed mixture alternately with pineapple juice;beating well after each addition. Fold in coconut,pineapple,macadamia nuts,raisins,mangoes,and candied cherries.
- Transfer to greased and floured 10" fluted tube pan.
- Bake at 350' for 50-60 mins or till toothpick comes out clean. Cool for 10 mins before removing from pan to wire rack to cool completely.
- In small bowl,combine confectioners sugar,milk and extracts. Drizzle over cake.
