Opa's Cake

- 4 oz. sweet or bittersweet chocolate shopping list
- 3 sticks butter,room temp. shopping list
- 6 eggs,room temp shopping list
- 1 TB pure vanilla shopping list
- 3 c flour shopping list
- Frosting; shopping list
- 1/4 c lt. corn syrup shopping list
- 2 TB butter shopping list
- 3 TB water shopping list
- 6 oz chocolate chips shopping list
- 1 tsp pure vanilla shopping list
- 2 c powdered sugar shopping list
How to make it
- Preheat oven to 325'
- Grease and flour large tube or fluted pan and set aside. Melt chocolate in double boiler,in heavy saucepan over low heat or in microwave.
- Let cool. In mixing bowl,cream butter and powdered sugar till fluffy. Add eggs,one at a time,beating well after each addition. Add vanilla,mix well. poir 1/3 batter into tube pan. Combine another 1/3 batter with melted chocolate and mix well. Spoon into pan to form the filling. Pour remaining batter on top.
- With knife,gently "cut "the batter to crearte marble effect.
- Bake for about 70-80 mins. Test with toothpick for doneness. Remove from oven and let cool 5 mins. Invert pan to remove cake and let cool before frosting
- For the frosting: In heavy saucepan,combine corn syrup,butter and water and bring to boil. Remove from heat and stir in chocolate chips. Stir till melted. Add vanilla and mix well. Sift powdered sugar and gradually add-frosting shouldn't too thick or it won't coat cake in thin layer You may not need all the powdered sugar.
- Frost cake with thin layer of frosting and let sit in refrigerator. Once hardened,does not need to be refrigerated.
