Beer Battered Cod

- 1 1/2 cups flour shopping list
- 1 T baking powder shopping list
- 2 eggs shopping list
- 10 oz flavorful beer ( I use Sam Adams Octoberfest. The sweeter, the better. No one likes a bitter batter!) shopping list
- 1 tsp kosher salt shopping list
- 1 tsp black pepper shopping list
- 1 tsp paprika shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp cayenne pepper shopping list
- oil for frying shopping list
- 2 lbs fresh cod shopping list
- salt, to taste shopping list
How to make it
- Mix top 9 ingredients in a bowl, and whisk until completely combined, and not lumpy
- Cut Cod into individual servings, about 1/4 lb each
- Heat frying oil to about 360
- Dredge Cod in the batter, allowing any extra to drip off before cooking
- Place in oil, and cook for a minute or two (depending on thickness) before turning over
- When done, place fried fish in a paper bag, and salt to taste and shake it up a little in the bag.
- Drink the remaining 2 oz of beer
- Homemade tarter sauce:
- 2 parts mayonnaise to 1 part relish
- 1/2 tsp lemon juice per 1/2 cup of tarter mix
- 1/4 tsp lemon zest per 1/2 cup of tarter mix
