Standard Process Lentil Soup

- 1 onion, chopped shopping list
- ¼ cup olive oil shopping list
- 2 carrots, diced shopping list
- 2 stalks celery, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 tsp. dried oregano shopping list
- 1 bay leaf shopping list
- 1 tsp. dried basil shopping list
- 1 (14.5-ounce) can crushed tomatoes shopping list
- 2 cups dry lentils shopping list
- 8 cups water shopping list
- ½ cup spinach, rinsed and thinly sliced shopping list
- 2 Tbs. vinegar shopping list
- Celtic Sea Salt® and ground black pepper to taste shopping list
How to make it
- In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender.
- Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes. Stir in lentils, and add water and tomatoes. Bring to a boil.
- Reduce heat and simmer for at least 1 hour.
- When ready to serve, stir in spinach, and cook until it wilts.
- Stir in vinegar, and season to taste with Celtic Sea Salt® and pepper, and more vinegar if desired.

This soup is WONDERFUL! I made it and the only thing I did different was use a little more crushed organic tomatoes. I will definitely make it again. Next time around I plan to also use a little more spinach in it as well! LOVED IT!!
