Creamed Salmon And Asparagus On Garlic Toast

- 3 to 6 oz. cooked salmon (or a 3 to 4 oz can) shopping list
- 5 tbsp butter, separated (2,1,2) shopping list
- I clove garlic, minced shopping list
- 1 tbsp olive oil shopping list
- 1/2 lb asparagus, trimmed and cut into 1” pieces shopping list
- 1 small shallot, chopped shopping list
- 2 tbsp flour shopping list
- 1 1/2 cup milk shopping list
- 1 tbsp Dijon mustard (nice spicy one! I used a horseradish dijon) shopping list
- 3/4 tsp dried dill (or 1 tbsp chopped fresh) shopping list
- salt and pepper to taste shopping list
- 2 thick slices Italian bread shopping list
- 2 tbsp chopped fresh parsley or fresh dill shopping list
How to make it
- Place 2 tbsp butter in a small saucepan or microwave safe bowl with the garlic. Melt butter and set aside.
- In skillet, melt another 1 tbsp of butter with 1 tbsp olive oil. Add chopped shallot and cook for 2 or 3 minutes. Add asparagus and cook until asparagus is tender, but still bright green. Remove asparagus with slotted spoon and set aside. Add remaining 2 tbsp butter to skillet. When melted, whisk in flour to create a roux. Whisk in milk slowly, and bring to a boil, stirring often. Add mustard, dill, flaked salmon and asparagus, and heat through.
- Meanwhile, brush bread with butter-garlic mixture and toast in toaster oven, under broiler or on a grill pan/griddle until golden.
- Place a slice of bread on each plate, top with some of the asparagus and spoon creamed salmon mixture over top. Garnish with chopped parsley or dill.
