California Roll Salad With Wasabi Ginger Dressing

For Salad
- 2 cups cooked white rice, warm or room temp, but not cold, with about 2t rice vinegar mixed in shopping list
- 4oz cooked crab meat shopping list
- 1/2 medium cucumber, sliced or match sticked(I don't peel) shopping list
- 1/2-1 avocado, diced shopping list
- 4oz cream cheese, cubed shopping list
- 1/2 cup bean sprouts(have nothing to do with California rolls...I just love them, so I added them :) shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- couple T sesame seeds(optional) shopping list
Creamy wasabi ginger Dressing*
- 1t soy sauce(I used Dales sauce...similar, but not pure soy sauce) shopping list
- 1-3t prepared wasabi(to taste) shopping list
- 3T rice vinegar shopping list
- 2T mirin(or sub sweet white wine) shopping list
- 2T mayonnaise shopping list
- 1T Dijon shopping list
- dash of sesame oil shopping list
- 1/4t fresh grated ginger shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- (if a sweeter dressing is desired, you can add a touch of honey a lil at at time..if using mirin, it probably won't be necessary) shopping list
- *if you don't like wasabi, you won't like this dressing, most likely...but, you can use a creamy avocado dressing or a ginger vinaigrette, instead, if you'd like! shopping list
How to make it
- Combine all salad ingredients, except sesame seeds, in medium bowl and toss well.
- Taste for seasoning.
- Sprinkle with sesame seeds
For Dressing
- Combine all ingredients and whisk well until combined.
- Drizzle over salad and serve with fried wonton strips, if desired(these are just wonton or egg roll wrappers cut into strips and fried for a few SECONDS in 375 peanut oil.
