Mexicali Cheese Ball

- 8 oz. pepper Jack cheese,shredded shopping list
- 8 oz cream cheese,softened shopping list
- 3 TB salsa shopping list
- 2 TB minced fresh cilantro leaves shopping list
- 1 med garlic clove,minced or pressed shopping list
- 1/2 c blue corn tortilla chips,crushed shopping list
How to make it
- Process all ingredients(except chips) in food processor until smooth,scraping down sides of the bowl as necessary,about 1 min. Transfer cheese mixture to center of large sheet of plastic wrap.
- Holding corners of wrap in one hand,twist cheese with other hand to seal wrap and shape cheese into rough ball.. (mixture will be somewhat loose). Refrigerate till firm,about 3 hours. Once cheese ball is firm, reshape as necessary into smooth sphere.
- Unwrap ball and roll in tortilla chips. Let sit at room temp for 15 mins before serving.
