The Perfect Swordfish Stew

- Enough for 2 hearty bowls...double it up for more than 2 people. shopping list
- 1 lb fresh swordfish (any white fish will work) shopping list
- 1 can diced tomatoes shopping list
- 1/2 cup chopped onions (quartered, or loose chopped) shopping list
- 1/4 cup white wine shopping list
- 1/4 cup water shopping list
- 2 T olive oil shopping list
- 1/4 cup chopped celery shopping list
- 2 T dry parsley, or 1/4 cup fresh chopped parsley shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- 1 jalapeno pepper, seeded and diced (don't forget to wash your hands after this one. Man, tough lesson learned...) shopping list
- 2 cloves garlic, diced shopping list
- lemon zest for garnish shopping list
How to make it
- Add all ingredients into a heavy bottomed pan, minus the fish See Photo
- Bring to a quick boil, and then lower heat to medium
- Heat on medium for 10 minutes
- Cut swordfish into 1" cubes, removing and discarding the skin
- Add the swordfish, stir to combine, and lower heat See Photo
- Cover and let simmer for 20 minutes
- Garnish with fresh parsley and a bit of lemon zest
- Raise your first spoonful and utter the words "To the crew of the Andrea Gail" and enjoy!
