Bacon, (butternut) Squash And Feta Cheese Tart

- CRUST: shopping list
- 500 g short crust pastry shopping list
- FILLING: shopping list
- 15ml oil shopping list
- packet of diced bacon shopping list
- 250 ml double thick cream/ normal cream also works fine shopping list
- small bunch of parsley chopped up shopping list
- salt shopping list
- pepper shopping list
- 100 g feta cheese shopping list
- 2 eggs shopping list
- 2 cloves of finely chopped garlic shopping list
- 300 g butternut squash cubed and cooked shopping list
- grated cheese shopping list
How to make it
- Pre heat oven to 170 C
- Grease a pie tin or oven proof pie dish. Roll out pastry untill its large enough to line the tin/dish with and that the pastry edges sits slightly above the rim. Prick the pastry base with a fork.
- Bake pastry for about 10- 15 minutes and take out of oven
- While pastry is baking, fry bacon untill golden.
- Beat together cream and eggs with garlic and parsley with salt and pepper for seasoning.
- Arrange butternut squash pieces with the bacon and feta n pastry pie dish and pour the cream-egg mixture over it. And sprinkle some grated cheese over the mixture.
- Bake for about 20 -25 minutes until golden and softly set.
- Enjoy warm or cold!
- (A great variation to this tart is to add spinach)

Made this for a late lunch, today, and it was very good. I made basically a pizza dough crust, and raised the sides a bit. It held the filling very well, but my egg mixture didn't seem to cover the squash like your photo. :) It didn't matter, the ...more
