Truman Capote's Chicken Hash

- 1 roast chicken, deboned, cut into chunks shopping list
- 7 medium sized potatoes, peeled, diced, boiled until tender shopping list
- 2 red and or yellow onions, diced large shopping list
- 2 red bell peppers, diced large shopping list
- 5 garlic cloves, minced shopping list
- 2 rsp fresh thyme shopping list
- 2 tsp smoked paprika shopping list
- 1 tbsp tomato paste shopping list
- 4 minced scallions shopping list
- 1/4 cup chopped parsley shopping list
- 3 tbsp olive oil shopping list
- salt & fresh ground pepper to taste shopping list
How to make it
- Heat oil in a large saute pan over medium heat. Saute onions until just translucent, about 5-8 minutes. Salt & pepper to taste,
- In the same pan, saute minced garlic and diced red peppers. Add thyme, paprika and tomato paste, mix well.
- Once the peppers start to carmelize, about 5-7 minutes, add the potatoes & chicken. Adjust seasonings, remove from heat.
- Sprinkle scallions & parsley before serving.
