Bananas Foster Cake

- 1 c. butter softened shopping list
- 1/2 c. brown sugar shopping list
- 1 1/4 c. sugar shopping list
- 2 eggs shopping list
- 1/4 c. rum (dark is preferred) shopping list
- 1 1/2 cups (about three medium sized) lightly mashed bananas, leave some chunks! shopping list
- 3 cups flour shopping list
- 1 1/2 tsp. cinnamon shopping list
- 1 tsp. baking soda shopping list
- 3/4 tsp. baking powder shopping list
- 3/4 tsp. salt shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease a bundt pan and dust with 1/4 cup sugar - this will give a nice crispy coating to the cake.
- Cream butter, sugar and eggs until fluffy.
- Add rum.
- Add mashed bananas, mix well.
- Gradually add dry ingredients, a little at a time.
- Blend until nice and mixed with a good "cake consistency."
- Bake one hour, or until a toothpick comes out clean.
- Set your timer for 10 minutes and then turn the cake out onto a cake plate and allow to cool completely before serving.
- Sprinkle with powdered sugar or serve with rum/cinnamon infused whipped cream.
