Bunny Chow

- 2 chicken breast (cubed) shopping list
- 1 large potato (cubed) shopping list
- 1 cup plain yoghurt shopping list
- 1 onion (finely chopped) shopping list
- 2 tbs oil shopping list
- 1 tbs tomato paste shopping list
- 1 tbs mix crushed ginger and garlic shopping list
- 1 tbs fresh herbs (thyme, parsley..) shopping list
- 2 tbs curry powder shopping list
- 1 cup chicken stock shopping list
- salt and pepper to taste shopping list
- 1 small lemon shopping list
- 1 large loaf of bread (solid not sliced) shopping list
How to make it
- heat the oil in a large pan
- add the ginger, garlic, onion, fresh herbs and curry powder
- stir well
- add the chicken, potato, tomato paste and stock
- simmer for 25 minutes on medium heat
- uncover the pot, add the yoghurt and simmer for 15 more minutes on low heat
- once the sauce had thickened and the meat tender
- remove from heat
- add salt and pepper according to taste
- squeeze in the lemon
- Now to make the Bunny chow...
- cut the loaf in three pieces sideways
- use the tow last pieces
- remove the soft bread in the middle to form a hollow bread case
- scooped in some curry in each of these "bread case"
- take some of the soft bread, break into small pieces and sprinkle on each bunny chow
- Eat with your hand and remember its a messy affair!!!! enjoy
