How to make it

  • Cut a cross into the skins of the tomatoes on their top sides. Pour boiling water over them to cover and sit 10minutes. They will now peel easy. Cut into small chunks.Peel the ginger and cut in 2 pieces. Put the sugar,tomatoes and ginger into a soup pot and let sit for 2hours. Put a small bowl on ice when you start your jam. Add the lemon juice and turn the stove on low and stir the mixture so that all the sugar dissolves. Now turn the heat up to high and the mixture will come to a rolling boil,stir constantly.It will be foamy and bubbly. Continue stirring and boiling for about 10-12minutes, or until the water from the tomatoes have evaporated and the mixture is translucent and glossy red.Drop a teaspoon of jam into your cold bowl,after a few seconds,tilt the bowl and if the jam runs like syrup,continue boiling,but if it is thick like jam should be, you know the jam is ready! Remove the ginger. Pour the jam into 3 small or 2 medium sized sterilized canning jars,seal.You can further seal+sterilize them by covering the jars with boiling water (water bath) and boil for 10min. Remove and let cool for 24hours.Enjoy on thick slices of bread with Brie cheese!Makes a great hostess gifts !!!!

    I too am from South Africa. This is a delicious jam! A great recipe! I add more small pieces of ginger while it is cooking and leave it in when canning making sure there is some ginger in each jar.

    Grandmother use to make tomato jam out of yellow pear tomatoes,one of my favorites in the summer time and fall on homemade bread.
