Oregano Infused Mushroom Soup

- 4 tbsp (60 mL) butter shopping list
- 1/2 onion fine diced shopping list
- 1 lb fresh mushrooms, thinly sliced shopping list
- 4 tbsp (60 mL) flour shopping list
- 2 cups (500 mL) hot chicken broth (or chicken broth made with stock cubes but I recommend homemade as it is best) shopping list
- 2 1/2 cups (625 mL) hot milk shopping list
- 1 pinch cayenne pepper (optional) shopping list
- 1/2 tsp (2 mL) fresh oregano shopping list
- 1 tsp (5 mL) chopped parsley shopping list
- salt and pepper shopping list
How to make it
- Melt butter in a saucepan. Add onionss, cover and cook gently for 8 minutes.
- Add mushrooms, salt and pepper. and oregano
- Cook for 4 minutes.
- Add flour and Mix.
- Add chicken broth.
- And stir well
- Add milk, basil and cayenne, if using.
- Garnish with parsley
- Simmer uncovered for 15 minutes.
- Remember a soup boiled is a soup spoiled.
