How to make it

  • Add all caramel ingredients to small saucepan. Stir until sugar dissolved. Boil on low with candy thermometer (approximately 1 hour) NO stirring! When caramel hits “soft ball” stage, remove from heat and stir constantly until caramel stops bubbling and is smooth.
  • Once the caramel starts boiling, prepare a cookie sheet by lining it with parchment paper then placing it in the refrigerator to cool.
  • Prepare a double boiler to melt the chocolate.
  • When caramel is almost done, retrieve the cooled cookie sheet. Spread out the seeds evenly in the center of the sheet. Pour out the hot caramel onto the seeds. Allow the caramel to cool for a few minutes. The caramel should be warm but not hot, and thickened enough that the edges can be easily separated from the liner. This will allow it to be handled easily while still being moldable. Knead the caramel to make sure the sunflower seeds are incorporated.
  • Melt chocolate in double boiler.
  • Break off 1" balls, rolling them in your hands. Flatten them onto parchment paper with your palms.
  • Spoon and spread melted chocolate on sides of turtles. Refrigerator for an hour, take them our and let them set at room temperature for a while.
