For randon acts of kindness - taken from wizard and witch newsletter. This is a very basic cookie/biscuit recipe - nothing fancy at all but you can ice cute smiley faces onto the biscuit. (I've converted the ingredient amounts for US readers - I apologise if they're a little cumbersome! Ingredients
- 1 Cup/250g butter , softened shopping list
- 10 tablespoons/140g caster sugar shopping list
- 1 egg yolk shopping list
- 2 tsp vanilla extract shopping list
- 3 Cups/300g all purpose/plain flour shopping list
- icing pen for smiley faces (optional) shopping list
- icing (optional) shopping list
How to make it
- Heat oven to 180C/350F
- Mix the butter and sugar in a large bowl with a wooden spoon.
- Add the egg yolk and vanilla then beat to combine.
- Sift over the flour and stir until the mixture is well combined.
- Press the dough together and roll out on a floured board.
- Use a round cookie cutter to make your biscuits, place on a baking sheet and bake for about 12 minutes.
- Leave to cool on a cooling rack.
- When cold I ce if wanted and then use the icing pen to draw smiley faces.
