- 3/4 CUPS ORZO ( IF YOU CAN FIND IT ROSA MARINA GREEK pasta) shopping list
- 3/4 CUPS rice shopping list
- 3 CUPS chicken broth shopping list
- 1/2 CUP butter shopping list
- 1/2 CUP pine nuts shopping list
- 6 cloves garlic shopping list
- 6 green onions shopping list
- 1 CUP fresh mushrooms ( I LIKE PORTABELLO MIXED WITH button mushrooms) shopping list
- 1 TBSP. parsley shopping list
- 1 TSP. oregano shopping list
- black pepper (TO TASTE) shopping list
How to make it
- DICE ONION, CRUSH GARLIC, SLICE MUSHROOMS
- MELT BUTTER IN SAUTE PAN OVER MEDIUM HEAT
- ADD ONION AND COOK UNTIL SOFT, STIR MUSHROOMS AND COOK UNTIL BROWNED
- STIR IN RICE AND ORZO COOK UNTIL BROWN AND CHALKY
- STIR IN WARM STOCK , COVER AND BRING TO A BOIL,
- REDUCE HEAT TO LOW AND COOK UNTIL RICE IS COOKED AND VERY TENDER AND ALL THE LIQUID IS ABSORBED ABOUT 40 OR 50 MINUTES
- ADD SPICES AND PINENUTS STIR WELL.
- LET STAND FOR 10 MINUTE TO ALLOW FLAVORS TO DEVELOP.

- ( YOU CAN LEAVE OUT THE GREEN ONION AND USE SHALLOTS INSTEAD, AND INSTEAD OF CHICKEN STOCK YOU CAN USE BEEF STOCK
