Corned Beef Pizza

- 2 cups of shredded green cabbage, shredded (about 1/4 head) shopping list
- 2 tablespoons olive oil shopping list
- 1 teaspoon salt shopping list
- Pinch of freshly ground black pepper shopping list
- 1 purchased pizza crust (such as Boboli) shopping list
- 1/4 pound thinly sliced corned beef shopping list
- 2 cups grated mozzarella cheese shopping list
How to make it
- Preheat the oven to 400 degrees F.
- Spray a large baking sheet with cooking spray.
- In a large skillet, saute the cabbage in the olive oil over medium heat for about 5 minutes or until it is soft.
- Sprinkle with the salt and pepper, and remove from the heat.
- Place the pizza crust on the baking sheet.
- Spoon the sauteed cabbage onto the crust and spread it out evenly to within half an inch of the edge.
- Arrange the corned beef slices over the cabbage.
- Sprinkle the cheese on top of the corned beef.
- Bake the pizza for 10 to 15 minutes, until the cheese is thoroughly melted and the pizza is nice and hot.
- Cut into wedges and serve immediately.

- Substitution(s)
- You can vary the flavor of this pizza by adding some shredded carrots to the cabbage when you sauté it.
- You could also add a little finely minced garlic to the vegetable mixture. Substitute one half cup of Parmesan for one half cup of the mozzarella cheese, if you like this flavor.
- In place of a Boboli, you can buy a bag of prepared pizza dough at the supermarket and press it out into a 10-inch round.
- Bake it for about 10 minutes in a 400 degree F oven before adding the toppings, then bake for another 10 to 15 minutes.
- For picky eaters, omit the corned beef and cabbage, and sprinkle with some mozzarella cheese.
- Serve with carrot sticks or applesauce so your choosy child will get some vegetables.
