Passover Apple Cranberry Cake Dessert

- 5 large apples peeled and slice shopping list
- some oil or butter shopping list
- 1 cup dried cranberries shopping list
- 2 Tbs sugar or to taste shopping list
- 2 tsp cinnamon or to taste shopping list
- juice from one lemon shopping list
- Cake: shopping list
- 3 cups Matzah "cake "meal or as needed shopping list
- 2 cups sugar shopping list
- 1 cup oil shopping list
- 3 eggs shopping list
- 2 tsp vanilla shopping list
- 1/4 cup orange juice ( or cranberry juice ) shopping list
- topping (optional ) shopping list
- more sugar cinnamon, nutmeg shopping list
- pecans shopping list
How to make it
- Make the cooked filling by sauteing the apples until soft but not mushy
- Combine the sugar, cinnamon and stir into apples with lemon juice
- Sweeten as desired
- Let cool
- The cake batter:
- Beat together the oil, eggs and sugar
- Add vanilla and juice
- Stir in the cake meal to mack a thick spreadable batter
- Spread the batter into a greased large 9x 13 or 10 x 14 baking pan
- Add on the cooked fruit filling evenly
- Sprinkle with more sugar and cinnamon, nutmeg or chopped pecans if desired
- Bake in a 375 until cake tersts done may be 45 to 90 minutes
- A toothpick in center will have no wet crumbs.
- Cool completely
- After cooling chill cake for easier slicing
- Cut into sqaures and top with a dollop of whipped cream or ice cream
- The texture should be a across between a cake, pudding ,cobbler dessert because the batter has no baking powder or leavening and it becomes spongelike absorbing any juices etc form the apples
