Eds Mashed Potato Waffles - Diabetic Friendly

- Ingredients: shopping list
- 2 eggs, separated shopping list
- I cup 1% milk shopping list
- 1 ½ cups cooked mashed potatoes, any type of potato even sweet potato shopping list
- 1/3 cup melted margarine shopping list
- I cup all-purpose flour shopping list
- ½ tsp. baking soda shopping list
- 1 tsp. salt shopping list
- non-stick butter flavored cooking spray shopping list
- Topping maple syrup and margarine or your favorite topping shopping list
How to make it
- Prepare waffle iron with non-stick butter flavored cooking spray
- Separate eggs, putting whites in one bowl and yolks in a larger bowl. Beat yolks add milk, mashed potatoes and butter. Mix dry ingredients and add to egg-milk mixture. Beat gently until smooth.
- Whites; beat until stiff. Fold in the batter. Heat waffle iron to the manufacturer's directions.
- Spray the waffle iron with non-stick cooking spray. Pour batter into the center of the waffle iorn close and cook till golden brown. Yield: about 4 for the large waffle iron and 6 for the small waffle iron.
- Serving size 1 waffle large or 2 small
