Armenian Lentil Soup

- 3T canola oil shopping list
- 1lg onion, chopped shopping list
- 3 garlic cloves, minced shopping list
- 1T ground cumin shopping list
- 1/2t coriander shopping list
- 1T Hungarian paprika shopping list
- 6C chicken stock shopping list
- 11/2C dried lentils, rinsed and drained shopping list
- 20 oz. frozen spinach, thawed shopping list
- 29 oz. tomatoes, chopped shopping list
- salt shopping list
- pepper shopping list
- 4T lemon juice shopping list
How to make it
- Put oil, onion, garlic , cumin, coriander, and paprika. Saute for 5 minutes.Then add the chicken stock.
- Add the lentils, spinach, tomatoes and bring to a boil.
- Reduce the heat to low, season with salt and papper, and simmer, covered, until the lentils are tender, about 50 minutes.
- Season with the lemon juice and additional salt and pepper, if needed.
- Let sit for 5 minutes before serving.
