Crunchy Kashi Cookies

- 1/2 cup shortening shopping list
- 1/2 cup brown sugar shopping list
- 1/4 cup sugar shopping list
- 1 egg shopping list
- 1/2 tsp vanilla shopping list
- 3/4 cup whole wheat flour shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp pumpkin pie spice shopping list
- 1/4 tsp salt shopping list
- 3/4 cup Kashi toasted Berry Crisp (or granola) shopping list
- 1/4 cup TVP granules, dry shopping list
- 1 1/2 cups currants, soaked in hot water and drained shopping list
- 1/2 cup toasted soynuts shopping list
How to make it
- Preheat oven to 350F, grease two cookie sheets.
- In a large bowl cream shortening and sugars.
- Add egg and vanilla, beating well.
- Add flour, baking soda, pie spice and salt, stir in until just blended.
- Fold in the cereal, TVP, currants and soynuts.
- Bake 10 to 12 minutes. Cool completely on sheets.
