True Shrimp Creole - Diabetic Friendly

- Ingredients: shopping list
- ¼ cup all-purpose flour shopping list
- ½ cup vegetable oil shopping list
- 1 medium onion, chopped shopping list
- 1 medium green pepper, chopped shopping list
- 1 celery rib, chopped shopping list
- 1 garlic clove, minced shopping list
- 1 can ( 14 ½ -oz ) stewed tomatoes, reduced-sodium shopping list
- 1 can ( 6-oz ) tomato paste, reduced sodium shopping list
- 4 bay leaves shopping list
- 1 Tbs. worcestershire sauce, reduced-sodium shopping list
- ½ tsp. hot pepper sauce shopping list
- salt and pepper to taste shopping list
- 2 pounds fresh or frozen uncooked medium shrimp, peeled and deveined shopping list
- Hot cooked rice, ( Diabetic use Brown or long grain rice ) shopping list
How to make it
- In a large heavy skillet, combine the flour and oil until smooth. Cook and stir over medium heat until flour is a rich deep brown. Add the onion, green pepper, celery and garlic; cook for 5-6 minutes or until vegetables are tender. Stir in the tomatoes, tomato paste, bay leaves, Worcestershire sauce, hot pepper sauce, salt and pepper. Cover and simmer for 45-50 minutes.
- Add shrimp. Simmer, uncooked, for 5-6 minutes or until shrimp turns pink. Discard bay leaves. Serve over rice. Yield: 6 servings
- Diabetic Friendly: Diabetics should use the Brown or Long grain rice.
- Nutritional Values: Calories per serving: 298, Fat: 12g, Cholesterol: 224mg, Sodium: 328mg, Carbohydrate: 20g, Fiber: 3g, Protein: 27g
