Tuna Fish cakes

- tuna, canned, drained. i like it in sunflower oil shopping list
- Mashed pots, its up to you how many your going to serve shopping list
- butter or a spread to go in the mash shopping list
- Strong Chedder cheese, grated shopping list
- Teaspoon of anchovy essence, more if you like! shopping list
- Homemade breadcrumbs, dont try the orange dried ones. shopping list
- 1 egg shopping list
- Chopped capers or whole if they are the lovely small ones. 1-2 teaspoons shopping list
- salt & pepper shopping list
How to make it
- Cook the pots, season well then mash into a bowl.
- Add cheese, capers, anchovie essence, while still hot.
- Add the tuna.
- Now if you have chives, parsley or spring onions, you could add 1 or more of those too.
- Mix & shape, wet hands are best for the shapening.
- Pop in the fridge when cool enough for a short while
- Take a break!
- When cold & firmed up, coat in the beaten egg & breadcrumbs.
- (can be cooked with out the egg & breadcrumbs to save time, but i prefer the lovely coat & crunch)
- Fry till golden brown.
- I serve this with cheese sauce & peas.
