Loc Lac Chicken

- 2 pounds boneless, skinless chicken thighs or steak shopping list
- 1/4 cup mushroom soy sauce (use regular soy sauce if you like) shopping list
- 1 Tablespoon dark soy sauce shopping list
- 2 Tablespoons sugar shopping list
- 1/2 Tablespoon fresh ground black pepper shopping list
- 1 Tablespoon vegetable oil shopping list
- 2 large garlic cloves, minced shopping list
- 1 small red Thai chili, sliced, optional shopping list
- 4 limes, juiced shopping list
- 1 red onion, thinly sliced shopping list
- 1 head boston or other soft head lettuce, washed, dried and separated shopping list
How to make it
- Cut the chicken thighs or steak into 3/4" cubes
- Place the cubed chicken or steak into a non-reactive bowl
- Add the mushroom sauce sauce and the dark sauce to the chicken in the bowl
- Cover the bowl and refrigerate for at least 20 minutes or up to overnight
- In the meantime, whisk together the sugar and lime juice until the sugar dissolves, then pour it into a jar and add the minced garlic cloves and the sliced chili pepper. Refrigerate if you will not be making the dish immediately.
- When you are ready to make the dish: take out a platter and cover it with the lettuce leaves. Then spread the thinly sliced red onions over the lettuce leaves.
- Next, take a large nonstick pan, add one tablespoon of vegetable oil and heat over high heat until you see a "shimmer" on the oil.
- If you are using the STEAK, brown the meat quickly and pour it over the lettuce and onions on the platter -- it is ready to serve with the sauce
- If you are using CHICKEN, pour the chicken and its marinade into the pan, brown it, turn the heat down to low to allow the mixture to simmer, cover the pan and allow it to cook for 20 minutes.
- Uncover the pan, turn the heat to high, and stir fry until the chicken is slightly dry.
- Pour the mixture over the onions and lettuce and serve with the sauce.
- For service, you can pour the lime sauce into individual small bowls and let everyone roll their own little lettuce roll.
