Southern Hot Dog Chili

- 1-2 pounds of ground beef (you can replace with any kind of meat) shopping list
- Enough water to cover and boil in a large pot shopping list
- Shake of regular salt to boil meat in to season while boiling shopping list
- 1 cup ketchup (to taste) shopping list
- 2 tbsp chili powder (or more to taste but wait to decide) shopping list
- 2 tbsp Worschestershire sauce shopping list
- 1 tbsp of dried onion flakes -optional shopping list
- 1 tsp of seasoned salt shopping list
- Shake of cayenne pepper (optional) shopping list
- Shake of black pepper shopping list
- (optional at last tasting - pepper sauce - Tabasco or your choice, Frank's is good but neither is necessary) shopping list
- I always add garlic salt to taste shopping list

- Crumble ground meat in large saucepan and cover with water,a little salt like you would pasta and bring to a boil. shopping list
- As soon as meat looks cooked through, have a collander ready to pour it into and have some hot water ready to run over it to drain off fat. shopping list
- Pour meat into collander and then rinse pot out with hot water and pour over meat and then rinse meat again with hot water to drain all possible fat off. shopping list
- Return to pot, leaving it on simmer. shopping list
- Put in ketchup, then shake in chili powder. Add water to just cover meat and bring up to a boil. You can always add more later to taste,but ketchup is not what makes this taste good - it is a balance of seasonings. shopping list
- Don't be afraid if the chili doesn't look like a red colored chili yet. Add the rest of the ingredients and simmer, lid on for a while and then if it is too wet, take the lid off. shopping list
- At this point, after about 30 minutes or so - you can taste it AFTER the spoon has cooled off and decide if it is spicy enough or not. shopping list
- You should be able to decide at this point if more spices or needed or more simmering is required. shopping list
- It is my experience, this recipe, coming from a Baptist cookbook that you can't go wrong unless you add too much of a spice. Also I have tried every way but only got one complaint when I added too much chili powder. Everybody likes a little spice. shopping list
- Serve on hot dogs in a bun and - much to my distaste as a Southern woman - they put mayonnaise on their hot dogs with mustard and chili and ketchup! You can put it on a bun, on some rice, on some pasta - BELIEVE me - if you have EVER HEARD OF A chili cheese BURGER this is the chili to put on it!! shopping list

- *** If you really want chili with beans - add whatever beans you have, I add 2 cans of pintos and 1 of black beans -drained and a can of tomatoes-or 2 - but that is only for you snowed in frozen people!!!! Hate it for you - it is only in 30's here in SC for 3 days)!!!!!!!! shopping list

This sounds good - I remember my dad always boiled the chili meat instead of browning it. Grew up (in Texas) eating mayo, mustard, or both on hot dogs...nearly fainted at age 18 when someone asked for ketchup..lol. Of course the 'mayo' was really tha...more
