- 10kg Wild Boar (Bush Pig) shopping list
- Smoke Essance shopping list
- apricot jam shopping list
- Marinade: shopping list
- 500ml orange juice shopping list
- 500ml mango juice shopping list
- 500ml lemon juice shopping list
- 250ml avocado Oil shopping list
- 25ml Crushed garlic shopping list
- 10ml mixed herbs shopping list
How to make it
- Rub pig with smoke essence and let stand for 60min, be very carefull with smoke essence too much will make meat bitter
- Mix all ingrediants of marinade together and let stand overnight
- Fix pig on spit and inject all over with marinade
- Baste every hour with marinade until done
- 10min Before carving glaze with apricot jam

I doubt that I will ever get an opportunity to try this recipe, but it sounds excellent. The only 'wild boar' in this neck of the woods is located in Ottawa and they call it the Government of Canada. They frown on hunting there, but Gawd only knows...more
