Polish Sausage Stew- Bigosz

- 4 Tbs butter or oil shopping list
- 1 lg onion thick sliced shopping list
- 1 head of cabbage, cut in 8th lenthwise shopping list
- 2 lbs quality Polish sausage cut into 1/4 inch thick slices shopping list
- 2 to 3 tart green apples, washed and unpeeled and quartered shopping list
- 3 tomatoes ,quartered shopping list
- 2 bay leaves shopping list
- 1 Tbs white vinegar shopping list
- pinch of sugar if apples not overly sweet shopping list
How to make it
- Saute onion in butter till soft in a Dutch oven
- Add cabbage slices and sausage
- Add tomatoes and apples with bay leaf and vinegar
- Cover tightly and simmer for about 2 hours
- Before serving, skim off fat, remove bay leaf and correct seasoning
- Serve in bowls with a good crusty bread
- If there is any left, flavor improves with age!
