Chicken Antonio

- 4 boneless chicken breast halves shopping list
- 10 to 12 ounces fresh mushrooms, sliced shopping list
- 2 tablespoons butter shopping list
- 4 cloves garlic, minced shopping list
- 1 bunch fresh parsley, chopped shopping list
- 1/4 cup dry white wine shopping list
- 1/2 cup olive oil shopping list
- 2 eggs, beaten with 2 tablespoons water shopping list
- 1 cup all purpse flour seasoned with salt, pepper and garlic powder shopping list
How to make it
- Gently flatten chicken to make an even thickness.
- In large skillet, heat oil over medium-high heat.
- Dredge chicken in seasoned flour and dip in egg wash.
- Add chicken to skillet and brown on both sides. Remove and keep warm.
- Drain off most of the fat from the skillet.
- Add mushooms to skillet and saute until mushrooms soften.
- Add fresh garlic and cook 1 minute.
- Season to taste with salt, pepper and garlic powder.
- Return chicken to skillet. Add wine.
- Cook over medium heat until wine is reduced by a third to a half.
- Add butter in pieces to sauce, stirring until melted.
- Plate chicken with mushrooms over and sprinkle with parsley.
