SHAMROCK PIE

- Ingredients: shopping list
- 1 cup sugar ( or Equal or equivalent ) shopping list
- ¼ cup cornstarch shopping list
- 1 ½ cups water shopping list
- 3 egg yolks, lightly beaten shopping list
- ¼ cup lemon juice shopping list
- 1 Tbs. butter or margarine shopping list
- 1 ½ tsp. Grated lemon peel shopping list
- 5 to 6 drops green food coloring shopping list
- 1 pastry shell ( 9-inches ) baked or graham cracker crust ( 9 -inches ) shopping list
- Meringue: shopping list
- 3 egg whites shopping list
- 1/3 cup sugar ( or Equal or equivalent ) shopping list
How to make it
- Preheat oven at 350.
- Combine sugar or substitute, cornstarch and water in a saucepan; stir until smooth. Bring to a boil, stirring constantly. Boil 2 minutes or until thickened. Stir a small amount into egg yolks; return all to the pan. Cook and stir 1 minute. Remove from heat; stir in lemon juice, butter, lemon peel and food coloring until smooth. Pour into crust. For meringue, beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form. Spread over hot filling, sealing to the edge. Bake at 350 for 10 – 15 minutes or until lightly brown. Cool.
