Chicken A La Maria

- 3/4 cup fine dry Italian-seasoned bread crumbs shopping list
- 2 Tbsp grated parmesan cheese shopping list
- 6 boneless chicken breasts shopping list
- 1/2 cup sliced green onion shopping list
- 2 Tbsp margarine shopping list
- 2 Tbsp flour shopping list
- 1 cup skim milk shopping list
- 10 oz pkg frozen spinach, thawed and well drained shopping list
- 3/4 cup fully cooked ham, diced shopping list
- 1/8 tsp nutmeg (optional-see note) shopping list
How to make it
- In a shallow dish, combine bread crumbs and cheese. Set half of the crumb mixture aside.
- Roll chicken in half of the crumb mixture to coat lightly.
- Place chicken in a 13x9-inch baking dish.
- In a small saucepan, cook green onion in margarine until tender.
- Stir in flour until blended. Add milk,; cook and stir over medium heat until thickened and bubbly. Add nutmeg and cook , stirring for two minutes more.
- Stir in spinach and ham.
- Spoon spinach mixture over chicken and sprinkle with reserved crumbs.
- Bake, uncovered for 40 to 45 minutes or until chicken is tender and no longer pink.
- 264 calories per serving, 7 g fat, 1 g fiber
- **Note: The recipe does not call for nutmeg, but I added it myself. I think it pairs well with the spinach.
