Glazed Carrot Puree with Fresh Ginger

- 1 bunch medium carrots; abt 5, scrubbed, chopped shopping list
- 1 tb unsalted butter shopping list
- 1 ts grated fresh ginger shopping list
- salt & pepper shopping list
How to make it
- Place the carrots in a medium saucepan with water to cover.
- Add the butter and bring to a boil.
- Simmer until the carrots are tender, about 5 minutes.
- Use a slotted spoon to transfer the carrots to a food processor or blender, leaving the cooking liquid in the saucepan.
- Add the ginger and puree until smooth.
- Season with salt and pepper to taste.
- Return the carrot cooking water to a simmer, then reduce the heat to medium-low and simmer, taking care not to burn the liquid (there are a lot of natural sugars from the carrots in it), until the liquid is reduced to about 2 tablespoons and is syrupy, about 15 minutes.
- Add this glaze to the puree and pulse to blend.
